BUCATINI ALL’AMATRICIANA
One of the oldest recipes of pasta in Italy, still popular in Lazio, Umbria and Marche. Our variation is the Roma’s one, with tomato sauce and bacon combined with the laundry spaghetti, "bucatini" precisely, to absorb most possible sauce; the original recipe (from Amatrice, a town between Lazio and Marche) involved the use of normal spaghetti.
