PORK SHIN
The most traditional roasts meat in Marche Region. The secret, as well as the quality of the meat, resides in the mix of herbs and spices that could enhance the flavor beyond belief. A slow cooking in the oven, which lasts hours, allows the shin (remember strictly whole shin), to absorb all the flavors of the sauce outside, releasing a thick and intense gravy.
A tip: be tempted to collect the gravy with bread, you will not be disappointed.
