Le Marche, thanks to their 170 km of coastline, have a rich culinary tradition of fish. The penne with salmon, nowaday an international dish, are so revisited in our own experience. It aims to give greater prominence to the flavor of the fish, with a touch of final taste represented by fresh parsley "sprayed" on the plate at the end of the preparation.
