TAGLIATELLE ALLA CHITARRA
There aren’t spaghetti that you can play! They differ from other types of long pasta for their square section and the method of preparation. Our grandmothers, especially in the southern Marche region, stretched the sheet of pasta on a table and then they passed it on a tool consisting of strings stretched in a frame (called precisely chitarra), obtaining thin and perfect wires. Given their spread have a different name for each italian Region: tonnarelli, troccoli, macaroni. Ideal for important sauces, as the typical Marche sauce with beef, pork and chicken.
