Our grandmothers, especially in the southern Marche region, stretched the sheet of pasta on a table and then they passed it on a tool consisting of strings stretched in a frame (called precisely chitarra), obtaining thin  and perfect wires. Given their spread have a different name for each italian Region: tonnarelli, troccoli, macaroni. Ideal for  important sauces, as the typical  Marche sauce with beef, pork and chicken.
