Le Marche is a region with a strong wine tradition (just think of the Verdicchio, a cru known all over the world). The wine is, however, only a small percentage of all that is pressed during the harvest. Most of the grape’s waste products (skins, seeds ...) is called mosto. To prevent that all of this product go to waste our ancestors began to put it in bread dough and to make cakes and donuts. The Gastreghini bakery, faithful to a centuries-old tradition, every year at the beginning of the harvest offers these very light and tasty donuts shaped into a braid of hair and only made with eggs, flour and wine.
