The origins of this recipe are mysterious: definitely not the city of Parma, as the name would suggest, perhaps Sicily, the home to the eggplant. It is actually the true national recipe, in which each region has helped to add a pinch of his culinary skill. And the result is remarkable: a single dish that can be enjoyed as the main meal or appetizer. Our preparation involves various layers of eggplant interspersed with great Bolognese sauce and bechamel sauce; and as a final seasoning a sprinkling of Grana Padano PDO.
